Ama pét-nat tea is a fine-aged low-alcohol drink made with water from the Izarraitz Massif in the Basque Country and carefully selected varieties of tea and herbal infusions. Our first Rosé, Elusive Cuvée Vol. 5 is a groundbreaking blend of low-alcohol sophistication, offering a complex harmony of red berry and vegetal notes with well-defined tannins and delicate bubbles.
Tea: Tennen Gyokuro, Kirishima, Japan
Tasting notes: A complex harmony of dry red berry and vegetal notes with well-defined tannins and delicate bubbles.
Origin: The bright green leaves of the Asatsuyu variety are gently nurtured under shade for three weeks before their late-April harvest, a process that intensifies their natural sweetness and gives rise to the rare Tennen Gyokuro.
Water: From the Alzola spring, Izarraitz Massif, in the Basque Country.
Elaboration: Once in contact with cultures of bacteria and yeast, the infusions, prepared using spring water, begin to ferment. Both precision and balance are fundamental in the transformation of the kombucha. These factors, together with the continued evolution and ageing in the bottle, are what allow Ama to become its own distinctive self. The addition of organic Elderberry extract allows us to produce the beautiful rosé aspect of this unique variety of Ama.
Ageing: This elusive Ama pét-nat tea cuvée is aged in the bottle for at least six months. It will continue to improve over time.
Master brewers: Dani Lasa and Ramon Perisé.
Pairings: Ideal for pairing with fatty dishes, as well as game. Works wonderfully with spiced cuisines, and emulsions such as pil pil. Can even be used in combination with lactic desserts with red berries.
When to drink: Best served by the glass to accompany specific dishes during dinner, or indeed for use in a cocktail.
Serve Preferably at 9-11ºC/48–52°F in a white wine glass. Handle and open carefully to preserve the bubbles. The sediment (the small particles of lees resulting from fermentation) present in each bottle can be served or kept in the bottle.
Storage Store in a cool, dry place.
